Ingredients:
1/2 of a box uncooked Dreamfields Angel Hair
2 tablespoons olive oil, divided
1 pound large raw shrimp, peeled and deveined
4 cloves garlic, chopped
1/4 to 1/2 teaspoon crushed red pepper flakes
1 can (28 ounces) Italian-style diced tomatoes, undrained
1/2 cup dry white wine
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
3 tablespoons freshly grated Parmesan cheese
Chopped basil (optional)
Kosher salt and freshly ground black pepper

Directions:

Cook pasta according to package directions; drain and return to pan.
Meanwhile, heat olive oil in large skillet over medium-high heat. Add shrimp; cook 3 to 5 minutes, until cooked through. Add garlic and crushed red pepper flakes; cook until garlic is tender, about 1 minute, stirring constantly. (Do not let garlic burn.) Remove shrimp from skillet; set aside.
Stir tomatoes, wine, parsley and basil into skillet. Continue cooking until liquid is reduced by half, about 5 to 8 minutes, stirring occasionally. Add shrimp and pasta to skillet. Continue cooking just to heat through, stirring occasionally. Sprinkle with Parmesan cheese and additional chopped basil, if desired. Season with salt and pepper as desired.
Makes 4 to 6 servings.

3 slices bacon, chopped
1 teaspoon butter
2 large yellow or sweet onions
Salt and pepper
Additional butter, optional
1/3 cup thinly shredded Gruyère or smoked Gouda cheese
Crumbled bacon, optional
Shredded Gruyère or smoked Gouda cheese, optional
Chopped parsley

Directions:

Cook bacon in large nonstick skillet over medium-low heat until crisp, stirring occasionally. Remove bacon and drain on paper towels; reserve. Measure bacon drippings and return 2 tablespoons to skillet (see note). Add 1 teaspoon butter; cook over medium-low heat to melt butter.
Cut onions in half lengthwise, then cut crosswise into thin slices. Add onions to skillet; season with salt and pepper, as desired. Cook, covered, over low to medium-low heat about 10 to 12 minutes or until onions are tender, stirring occasionally. If necessary, small amounts of water may be added if mixture begins to stick. Uncover and cook over medium to medium-high heat about 5 minutes until golden in color and caramelized as desired. Watch carefully; do not burn. Remove from heat.
Meanwhile, cook pasta according to package directions. Drain and add to skillet with onions; toss, adding additional butter to taste, if desired. Add reserved bacon; toss. Add 1/3 cup cheese and toss again. Sprinkle with additional bacon and cheese, if desired, and parsley before serving.
Makes 4 servings.

Note: If bacon does not yield 2 tablespoons drippings, add enough butter to make 2 tablespoons.

1/3 cup fresh lemon juice
1/4 teaspoon salt
2 cups packed baby arugula
2 cups halved cherry and/or grape tomatoes, assorted colors if possible
1/3 cup freshly shredded Parmesan cheese
1/3 cup toasted pine nuts (optional)
Salt and pepper (optional)

Directions:

Cook pasta according to package directions. Drain; rinse in cold water or in ice water until completely cooled and drain well.
Meanwhile, in small bowl, whisk together olive oil, lemon juice and salt. Toss with pasta.
Add arugula, tomatoes and cheese to pasta. Toss gently to combine. Sprinkle with pine nuts and season with salt and pepper, if desired. Serve at room temperature or chilled.
Makes 8 servings.
